Easter Blessings

Do you remember what the meaning behind Easter is? The resurrection of Jesus Christ, right? The son of God who was sacrificed to pay for all the sins and future sins of the Christian race. Well, this Easter, we had our first Easter gathering (there weren't enough guests to qualify as a party), and it was completely 'sinful' how much sugar I prepared for this day, not to mention the lengths the 'Easter Bunny" went to in order to keep up with the changes in tastes as the kids get older.
I didn't take pics, but I literally filled my teenage step(ish) daughters basket with Tacis chips, a 6pk of Root Beer, Victorias Secret spray lotion, among a few other candies and gums that fall into her picky and expensive tastes. I definitely put way too much thought into these things, you can't just run to Walmart to pick up what I come up with for these babies. Need ideas? just let me know..

For this celebration, I set my hopes too high and didn't get to all the glory that would have come from the missing Cheeseball Chicks and Bunny Creme Puffs. Returning from last year, I did make my Rice Krispy Eggs, covered in chocolate, candy coating, or fondant with Sweet Tarts mini chews inside. I made these last year, just one for each of my kids. The chocolate covered pretzel rods were just a colorful filler, bright and yummy. The candy coated strawberry 'Carrots' were nice to look at and who doesn't like chocolate and strawberries?

Since the dinner was outside, I decided to take the traditional Easter Ham with pineapple and cherries and stick them on skewers. Rather than grilling them, I just cooked the ham in the oven, cut into chunks and threw some pineapple and cherries on. Who doesn't love just about any kind of food on a stick? There was also a sick amount of eggs incorporated into this day. The egg salad croissant 'Carrots' were a second try from last year. They actually turned out quite well, despite the fervent rush I was in when they were wrapped into cones, and held a lot of egg salad, they were almost a meal on their own.
Warning!! What comes next is not for the faint of heart, weak of stomach or diabetic!

The cupcakes were loaded with sugar, sugar and more sugar! The white cake had jelly bean chunks inside, the chocolate frosting was shuuugarry, and the Bunny butts and flowers were Royal icing (which is about the only icing I can make the right consistency). These cups of cake should have had a warning label, cause they were High Risk.
Additional dishes not picture worthy were the Deviled Egg Chicks and Caesar Pasta Salad.
